Vegan Corned Beef and Cabbage aka “Bully Beef and Cabbage”

In Jamaica Bully Beef or tin corned beef and Cabbage is a quick and inexpensive meal option. Bully Beef can be eaten as breakfast, lunch or dinner. In a sandwich or with fried Johnny cakes.

I recently discovered a way to make it as a vegan option and it really tastes good! And its quick. Now for the corned beef, if you have never tried a Beyond Burger I highly recommend it. This package comes as two meat patties which is what I will be using as the corned beef.

Ingredients

  • 2 Beyond Burger patties
  • 1/2 of an onion
  • 2 garlic cloves
  • 1 tomato
  • 1/4 head of cabbage cut up into strips
  • Garlic salt to taste
  • Pepper
  • To taste
  • 2-3 tbsp ketchup
  • 1/2 scotch bonnet pepper
  • 1-2 tsp picka pepper sauce (optional) can be bought at Caribbean supermarkets or amazon.

Method

Sauté onions, garlic, scotch bonnet pepper, tomatoes. Once onions are tender add Beyond patties and brown. Add garlic salt, pepper, ketchup, picka pepper sauce, and cabbage and cook covered on medium heat until cabbage becomes translucent. Serve over white rice, brown rice or quinoa.
